Baked Jicama Fries

As you’llsee, I don’t really measure when it comes to this recipe. You might have a huge jicama and not like lots ofsalt, so measurements are all based on taste. One of my favorite things about these tasty gals is that they can be eaten cold and re-heat beautifully.

Cooking Steps
·         Pre-heat oven to 400F and line baking sheet with foil
·         Slice jicama into preferred shape (I used my handy dandy fry slicer)
·         Rinse the jicama and gently pat dry (they can remain damp…no biggy) and place into medium-large glass bowl evenly
·         Cover the jicama with the melted oil
·         Dump the jicama onto the sheet and spread out
·         Sprinkle with seasonings
·         Place sheet into oven

·         Bake for approx. 40 min (or until it reaches your desired texture) moving around occasionally so they brown evenly

Italian Zuchini


Melt butter in a frying pan, add chopped onion and Zuchini.  When Zuchini is cooked add tomatoe sauce about 2 cups, basil, oregano, salt, pepper and garlic to taste.  Let simmer until warmer though.  Place swiss cheese on the top until melted.  Serve.

Rotkohl

1 head red cabbage, shredded
1 apple, grated (you can leave the skin, just remove the seeds)
½c apple cider vinegar
½c water
¼c sugar
¼ tsp black pepper
pinch cloves
1 Tbsp fresh lemon juice
*for sweeter version: 4 Tbsp butter

Add cabbage, apple, vinegar, water, sugar, pepper, and cloves to a large pot. Cover and bring to a boil over medium heat. Cook about 30 minutes or until tender, but still with a small bite. Drain liquid. Add in fresh lemon juice.
 
*If making sweeter version: brown butter in a small saucepan by cooking it over medium-low heat until foamy and golden. Remove from heat and stir into cooked cabbage mixture with the lemon juice.

Lemon Dill Salmon

Line a jelly roll pan with foil. Spray with nonstick spray.
Lay a salmon filet on the pan. Squirt lemon juice all over filet. Sprinkle with dill, salt and pepper to taste.
Broil in oven 5-10 minutes until fully cooked.
